This tea is grown in the Anhui province of China. In dry appearance the tiny silvery buds are off-set by the darker secondary leaves, which turn bright green when steeped. The leaves yield a yellow-green infusion that is delicate, sweetly vegetal, and hinting at asparagus, with increasing pungency the longer it is allowed to infuse. It takes about 30,000 bud & leaf sets to make up a pound of tea, with each batch gently hand-rolled to twirl the leaves into its final shape. Use 1 rounded teaspoon (3 grams) per cup (8 oz) of water at 175 degrees. Do not use boiling water - visually, the water should have gentle steam with no bubbles. Steep for 2 - 4 minutes and then enjoy! Our 2 oz bag makes approximately 24 cups of tea. For Iced Tea, use 2 rounded teaspoons steep as normal and pour over ice.
Notes: All tea may be steeped at least twice and still retain most of its flavor. Also, for stronger flavor add more tea, not time, because teas may taste bitter if over brewed.
